Here are a special kind of crabs that grows in my country, exactly in my province, Esmeraldas, in the North-west of Ecuador, it is a coastal province, and in it live most of the african-american population in the country.
These crabs are part of our food culture, and they are special because they only grow among the roots of the mangrove trees, in the confluence of the north rivers and the sea, they live in the mud and it cost a lot of work to cacht them. And it is a costume to prepare them with coconut juice and big bananas (they are not exactly bananas, but are similar) and they are very delicious. Nowadays, they are a little expensive, because more and more people consume them. When I return to my country I’ll ask my mother to prepare some for me, I like that dish!
